Alpine is a mild but dry cheese. It is the base of our La Shae, but Keely loves it so much we decided to offer it as a regular cheese. It reminds her of a mozzarella with a bit of a twist. Like mozzarella, the milk temperature is raised to about 115 degrees farenheight. But the bacteria used to flavor the milk is quite different! Enjoy this cheese on toast, in fondue, or just plain. It is a yummy one!
